If you have any leftover rice, don’t throw it away — most cultures have developed recipes specifically to use up leftover rice, from Italian suppli, which uses up leftover risotto, to the fried rice of China and Southeast Asia. Cooked rice should be quickly cooled and then stored in an airtight container in the fridge. It should be eaten within 2 days.
