Originally, pudding mixture was tied in a cloth and suspended from a wooden spoon in a pan of boiling water to cook. Now, we use pudding basins, available in ceramic, glass, steel and aluminium. Ceramic ones don’t have a lid but are the best insulators and let the pudding cook through without overcooking the edges.
