Rice dishes are usually of two types: risotto, made from short-grain rice, in which the rice is cooked slowly over the stove while stirring, and pilaf, in which the rice is cooked in a little oil or butter, usually with onion, before all the liquid is added. In addition to these two dishes, there is what European cooks call “Indian-style” rice, which describes rice cooked in an abundance of boiling water just as pasta is cooked. This method is excellent for making perfectly fluffy rice that doesn’t stick to itself.
