Denmark is well known for its internationally acclaimed beers Carlsberg and Tuborg, but there is much more than this. Copenhagen offers a myriad of micro-breweries with eclectic flavours; it is a leading city when it comes to natural wines, and the level of schnapps and aquavit on offer is mind-blowing. This chapter takes us through these three main groups of drinks – snaps, wine (and what to do with the leftovers: make vinegar of course) and beer, with a classic recipe of pork cheeks with beer.
