You’re probably looking at this page and wondering: ‘Eggs? What could be new about eggs?’ To be honest, that was my response too when I saw the section on eggs at chef school. Something humans consume almost daily (you’d be surprised just how many products contain egg), the humble egg is one rather interesting product and understanding it is key to improving baking, desserts and cooking skills.
So what is an egg? An egg is the embryo of an unborn bird, lizard or fish. The ones that we’re interested in are the poultry kind. The shape of an egg is helpful in working out one key component: its age. The older an egg, the more difficult it is to work with.
