You have to be yourself when you are creating and cooking. You do what you know and do it to the best of your ability. I do some different things occasionally. I do cream sauces sometimes, but that is not what Dooky Chase’s is all about. When you come to our restaurant, you know what you want.

Our recipes are not representative of “Uptown” New Orleans. They are just representative of the Chase family. So here are some sauce recipes that can complement many of the traditional Creole dishes, or anything else suitable!
