Delicious food is enhanced by atmosphere. I don’t mind how simple or rustic, or how grand and formal, but alfresco dining, with laughter, is my ultimate delight.
Not so long ago, in Guadaloupe, I had one of the most magical meals, with new friends. It was under a tin-covered shed in the middle of a cane field. On arrival we fixed ourselves ‘ti-punch’ (rum, sugar and lime) from the open bar. This is a little pre-meal ritual which took very little getting used to. We ordered many dishes. I had met Marie-France on the plane coming over and she could not have been more generous, even to the point-of lending a stranger like me her sister’s phone. Caribbean people can be like that.
