If the grouse did not exist the woodcock would hold pride of place among the game birds; but it has an advantage over grouse which can only be appreciated to the full in its country of origin, this is because the flavour and aroma of the woodcock is less fleeting than that of grouse and can be kept for a longer time before being cooked. The particular qualities of the flavour and aroma of the woodcock can only be realized if the birds are hung for sufficient time.
The snipe is a smaller version of the woodcock and is distinguished from it by the fact that it lives almost completely in marshy areas whereas the woodcock inhabits the tidal waters of rivers.
