A fermentation crockpot is a great option. It is large and wide with thick walls; the shape varies but the one shown here is typical. The pot keeps the ferments cool and at the same temperature for the whole process. It is made from clay, so your ferment will be effectively in the dark even though you might put it on your kitchen bench. It comes with specially designed weights that you use to press your ferment underneath the water, which is very convenient. Finally, it has a lid that you do not need to open during the process. This particular crockpot has a water lock, though there are other types available. You fill an outer ridge up with water and then you put the lid down into the water. This way, the gases being made during the fermentation process will be able to come out and yet nothing will be able to get in. This prevents any incoming bacteria and you don’t have to remember to burp the jar daily.
