You can also get special fermentation lids that will fit your glass jar, instead of a screw-on lid. These are easy to find online and do not cost a lot. This lid enables the gases to get out whilst stopping anything getting in, preventing explosions and unwanted bacteria. All you do is screw them on and you do not have to unscrew or even touch the ferment until it is ready. The lids vary in type but all have a version of one-way airlocks.
You will still need to use weights to ensure the vegetables stay under the liquid during fermentation. In these pictures you can see the use of a stone as a weight – no need to buy any expensive weights when nature will provide you with ones for free! Make sure you boil the stones though for some time to get rid of unwanted bacteria and other microorganisms.
