Pheasant are the most beautiful of all game birds. Their feathers glimmer with brilliant metallic greens, blues and rusts. The hen pheasant is speckled with rich chocolate browns and blacks. Being the most widespread of all game birds they are common sights feeding on open, cultivated land. It was thought that the pheasant originated in China, but now it is known to be European in origin and might well have been brought to these shores by the Romans, who appreciated its fine flavour. Today the pheasants in Britin are crosses between various species brought in over the years.
