In this presentation style, large, flat pieces of food are stacked one on top of the other to create a tall, tower effect. These solid pieces may be cemented together with bound protein salads, thick sauces, spreads, or mousses. To provide a crunchy element, crôutons, wafers, or pastry layers may be included in the construction. Salad greens usually appear in these presentations as lacy tangles or plumes extending from the top.
