We opened the doors of Ginger & White on a sunny Tuesday in July 2009. It was not the best timing: Emma and Nick were juggling life with a six-month-old baby girl and Tonia was eight months pregnant. Without the budget for an architect, we designed the café ourselves using a ruler and tape measure. We can remember measuring the gap in the counter and toying with how tight we could make it to maximize our minuscule pipsqueak of a kitchen. Then Nick turned to Tonia and ran the tape measure across her bump to check that she could still fit through the gap and that was that: decision made!
