Anyone with a mild interest in fish and marine habitats knows that the world’s fisheries are in need of increased human awareness. Like many chefs, I’ve made it a priority to source seafood responsibly and in line with greater environmental concerns, without sacrificing the enjoyment and celebration of the ocean’s bounty. As much as our hearts are in the right place, I’ve learned that it is difficult to keep up with the ever-changing stream of data about the fishing industry and its greater impact.
