Quinoa (pronounced KEEN-wa, from the Quechua kinwa) is a fascinating plant, a species of goosefoot indigenous to Peru and considered sacred by the Incas. Quinoa is capable of withstanding very high altitudes and of producing thousands of tiny edible seeds. Although you can find red quinoa, most is pale beige, and the flour ground from these seeds is light yellow. It has a flavor that can taste a bit like sesame or, when baked into a cookie, distinctly of peanut butter.
