Stalk or stem vegetables, like root vegetables, may be cooked with the skin on; but they are better when peeled. If stalk vegetables are garden fresh, like young asparagus, do not strip them of their protective covering. But garden fresh vegetables are pretty uncommon. Therefore, I recommend that all stem vegetables, asparagus, broccoli, and celery, be peeled before they are cooked.
