The holidays at the beginning of the month disrupt the fish trade more noticeably than other food supply lines and bad weather can easily halt landings at this time of year, seriously affecting prices and availability. But as far as quality is concerned, January is a good month for many Atlantic and North Sea fish, which seem firmer and brighter the colder the waters they are fished from. At the same time, the processing plants which grab all the fish they can before Christmas have now loosened their grip on the market.
