  • About
There are numerous delicious and healthy fish dishes in the Japanese culinary tradition, including many using fish that is so fresh it does not require cooking. Others employ a wide variety of cooking methods, ranging from “cooking” the fresh fish in vinegar, to flavouring it with seaweed, or lightly deep-frying in tempura.
