This is a quick, nutritious dinner for two or more: the portions can easily be increased. The soup is a light stock with spinach and egg ribbons. The buckwheat noodles are satisfying and can be served warm or cold. They can be made ahead of time and kept in the fridge, but bring them to room temperature before serving. The lettuce takes but minutes to prepare and stir-fry. Fresh fruit is a sensible and delicious way to finish off this speedy yet wholesome meal.
