Homage Dinner Series: Noma

During the last few weeks of Mission Street Food, we decided to do away with guest chefs and center our menus around the menus of phantom culinary heroes. But since we didn’t have the resources or connections to actually visit any of the restaurants we were mimicking, we had to piece together our recipes by poring over images online and culling bits of information here and there, not unlike teenagers learning about sex from porn.

To provide a little bit of insight into our process, I’ll lay out the days leading up to an homage to Copenhagen’s Noma and its chef, René Redzepi. In case you’re unfamiliar with it, Noma earned the #1 spot in 2010’s San Pellegrino World’s 50 Best Restaurants list. Without getting too starry-eyed, let’s just say that René Redzepi has probably created the world’s most successful combination of high technique with locally sourced products, and redefined Nordic cuisine.
