In addition to standard equipment like knives, cutting boards, pots, and pans, there are some kitchen tools that are indispensable for cooking at a high level. With little more than these few items, you can turn your local Chinese dump into a charitable restaurant empire.

Whipped cream charger: not as ridiculous as you think

Torch: A mini flamethrower. There are obvious uses, like crème brûlée, but it also comes in handy when you want to peel a tomato—just give it a quick singe and the skin will rub right off. The torch lets you apply high heat selectively, so you can toast a marshmallow right on top of a dessert. Or relight your stove’s pilot light.
