I love smoked bacon in the morning. The smell alone (especially when combined with coffee) is reason enough to wake up. And somehow it just seems to blend perfectly with whatever else I’m having for breakfast — whether it’s something purely savoury like eggs and potatoes, or something sweeter like pancakes or French toast, where my favourite thing is to let the crispy, salty bacon steep in the maple syrup. I like to cook it a few different ways but, regardless of method, I would advise you to get the best quality meat you can afford, as it will make all the difference.
