Here are my favourite dips for serving with chips:
- Mustard-smoked paprika mayo.
- Harissa mayonnaise - simply stir harissa paste into good-quality mayonnaise until it is spicy enough for your taste.
- Tomato and fresh ginger mayonnaise - finely grate a 1cm (½ in) piece of fresh root ginger and stir it into 100ml (3½ fl oz) good-quality mayonnaise with tomato ketchup to taste.
