Chicken was once considered a luxury in Spain and there are many traditional recipes. Try serving chicken with spicy red pepper sauce, in saffron rice, with spiced figs, or with ham and peppers. Other poultry, such as duck and turkey, are also on many menus, while game birds are immensely popular. They may be stuffed with grapes, marinaded in wine, cooked with mushrooms or served in delicious sauces.
