Even in farmers’ markets, parsnips are rarely sold by variety. However, gardeners can seek out several popular types, distinguished by their root shape: bulbous (stocky roots with rounded shoulders), wedge (broad and long), and bayonet (narrow and long).

All American These hefty wedge-type roots have a sweet, nutty flavor and grow to 12 inches/30.5 centimeters long and 3 inches/7.5 centimeters wide.

Harris Model This plant yields hardy, flavorful, snow white roots about 15 inches/38 centimeters long that can be overwintered for a spring harvest.
