There are two cautions: First, raw yams contain compounds that are potentially harmful to the skin. When peeling raw yams, it is important to wear disposable surgical gloves or to coat your hands with cooking oil, especially if you have sensitive skin. Second, never eat yams raw, with the exception of the Chinese yam, as these same compounds can irritate the mouth and throat.
