  • About
These starchy sides are suited to accompany many different mains, from saucy stews to succulent sausages. However, they also have main-character potential. The simple additions of some fried eggs or fine cheeses make these dishes a more-than-acceptable main course.

Here you’ll find four classic Swiss side dishes, including the world-famous potato fried pancake, Rösti (as well as a version from Graubünden that you can make in the oven). Creamy polenta from Ticino is a hearty favorite and pairs just as well with Alpine cheeses as it does with rich stews and sauces. And don’t forget the perennial Swiss-German favorite: Spätzli/Knöpfli–little dumplings, boiled and then fried–that are the most perfect way to sop up everything from runny egg yolks to Wildpfeffer (marinated game meat).
