The majority of the population in the hilly landlocked state of Tripura is Bengali, and the Bengali influence is evident in the food of the region. The area produces oil seeds, sugar cane, potatoes and pulses, although rice is the staple crop and forms the basis of the diet, along with fish cooked in mustard oil. Tripura is also well known for hand-woven cotton and intricate wooden carvings.
