To find the best-quality fish, start with a reliable fishmonger or the seafood department of a well-stocked food store with frequent turnover. A good fish market will clearly identify its products, where they came from, and how they were harvested and stored.
The staff should be readily able to tell you the origin of a fish and whether it is fresh or previously frozen. They should also willingly skin, fillet, or otherwise prepare the fish to your specifications if you choose not to do it at home. Ask questions: if the answers are vague, consider shopping elsewhere.
