Originating from Modena, Italy, balsamic vinegar is an aged vinegar, which is slightly sweet and dark brown. Award-winning Mediterranean ingredients supplier Belazu say that density is crucial to understanding premium balsamic. As a rule of thumb, the lower the density, the more acidity on the palate.
