    I tried wild garlic hummus for the first time in Estonia, bought from an ordinary supermarket, and I was hooked! The quantity of wild garlic below makes quite a strongly flavoured hummus, so if you would prefer it milder, just use half the amount. And if you happen to have a jar of Fermented wild garlic in your store cupboard, feel free to use that instead — in which case, there’s no wilting required, just drain it well.
