I love everything about this martini. With its heady fragrance, subtle sharpness and amber hue, it’s perfect for a girls’ night in.
Put the rhubarb into a stainless-steel saucepan with the sugar and 150 ml (5 fl oz) of water. Bring to the boil, then turn the heat down to a simmer and cook until the rhubarb has fallen apart, about 15 minutes. Stir in the vanilla extract and rosewater.
Press the stewed rhubarb through a sieve into a bowl, pressing down with the back of a spoon to extract as much puree as possible. Lea
