Without a doubt, the non-alcoholic drinks that are most common across the Baltics are kvass, kefir and birch water. Unfortunately, birch water does not keep for long, perhaps a couple of days, so it’s something to add to your list if you decide to travel to the Baltics. Fermented grain-based kvass and milk kefir, however, are now among my favourite soft drinks.

The spritzers and cocktails in this chapter are either inspired by Baltic ingredients or loosely based on drinks I tried during my travels in the region. In Estonia, wine is traditionally made from fruit other than grapes — sparkly rhubarb wine was my favourite — and so I have developed some zesty fruit-based drinks to reflect that aspect of the culture.
