As strange as it may sound, one of my favorite vegetables is the onion, because of its subtle sweetness. The complex flavors of raw onions hit you right away: bitter, sharp, sour–but when you cook them, the natural sugars come to life. We love to use onion marmalade on hamburgers, pizza, or grilled sandwiches. It’s a great condiment to make ahead and store in your fridge for when you crave it.
