Margaritas go well with bacon: that acidic bite from the fresh lime juice and tequila helps cut right through the bacon fat. If you aren’t into spicy, you can skip the habanero in the syrup, or just use a milder chile such as a jalapeño or serrano.

Ingredients

  • 2 ounces (60 ml) mezcal

Method

Fill a cocktail shaker with ice. Add the mezcal, syrup, and triple sec and shake or stir for 10 seconds.

Spread the salt on a small plate. Moisten the rim of a glass with one of the lime wedges; dip the rim in the salt and twist to coat. Pour or strain the mixture into the glass. Garnish with the bacon (if using) and lime wedge.
