These, like good bagels and bialys, used to be a New York standby but seem to have all but disappeared from the typical bagel shop assortment. These are more tender than the classics, but not a bad substitute, all things considered. If you can get some chunky opaque pretzel salt, by all means use it; the rolls will taste pretty much the same, but they’ll look terrific.
