I am constantly humbled by the greatness of crumble.

I have a weakness for crumble topping. That buttery, sweet crunch with a hint of salt makes me surrender every time. The crumble bar involves two of my favorite things: crumble topping and fruit compote. Knowing that crumble is sweet, I like to match it with a compote that demonstrates a nuanced and addictive acidity. I chose tart raspberries and the unique fragrance of lychee for this rumbling crumble bar. If you are not familiar with lychees, they are a unique Asian fruit with a distinctive character of sweet plums and rose water. It is an instant ticket to a tropical paradise.

To pastry nerds, raspberry and lychee have become famous partners in crime thanks to the “Ispahan” macaron by Pierre Hermé. It is a sublime creation that combines a rose macaron base, sweet rose petal cream, fresh whole raspberries and lychees. My Raspberry & Lychee Crumble Bar, however, delivers the same incredible satisfaction while being super-simple to make at home. Crucially, this recipe also provides plenty of opportunity for customization. You can make it work with almost any fruit compote filling. I took a unique, game-changing flavor combination and transformed it into a snack that is easily made within an hour. However, I promise you that it will disappear in seconds.
