Sweet Potato Pie Biscotti

Name: Sweet Potato Pie Biscotti
Yield: Makes approximately 30-40 small biscotti
Ingredients: ½ cup white sugar; 1 cup chopped white chocolate or chips, melted, optional; ¼ teaspoon orange oil; ¾ cup unsalted butter, melted; 4 ½ - 4 ¾ cups all-purpose flour; ½ teaspoon cinnamon; ¼ teaspoon baking soda; 2 teaspoons baking powder; 1 cup chopped walnuts, optional; 1 ½ cups light brown sugar, firmly packed; 2 eggs; 2 teaspoons pure vanilla extract; ¾ cup roasted sweet potato puree (or finely mashed); 2 teaspoons pumpkin pie spice; 1 tablespoon cinnamon; ¼ teaspoon salt

This is one of my favourite biscotti recipes and just perfect for Thanksgiving or any holiday but always welcome, no matter what season. These are crisp, spicy and festive, making them a wonderful coffee klatch biscotti or chai-dipping treat. I often coat one side of these with melted white chocolate which I mix with cinnamon or orange oil. They are also wonderful made with roasted sweet pumpkin puree.
