Name: Sweet Potato Pie Biscotti
Yield: Makes approximately 30-40 small biscotti
Ingredients: 1 cup chopped white chocolate or chips, melted, optional; 1 cup chopped walnuts, optional; 1 tablespoon cinnamon; 2 teaspoons pumpkin pie spice; ½ teaspoon cinnamon; ¾ cup unsalted butter, melted; ¾ cup roasted sweet potato puree (or finely mashed); ¼ teaspoon baking soda; ¼ teaspoon salt; ½ cup white sugar; 1 ½ cups light brown sugar, firmly packed; ¼ teaspoon orange oil; 2 eggs; 4 ½ - 4 ¾ cups all-purpose flour; 2 teaspoons pure vanilla extract; 2 teaspoons baking powder

This is one of my favourite biscotti recipes and just perfect for Thanksgiving or any holiday but always welcome, no matter what season. These are crisp, spicy and festive, making them a wonderful coffee klatch biscotti or chai-dipping treat. I often coat one side of these with melted white chocolate which I mix with cinnamon or orange oil. They are also wonderful made with roasted sweet pumpkin puree.
