Method

  1. Prepare a double batch of dough.
  2. Turn it onto a clean work surface and gather it into one mass of dough, using gentle pressure to bring it together. Press it into a flat disk, about 1 inch (2.5 cm) thick.
  3. Wrap in plastic wrap and refrigerate for 15 minutes to firm up.
  4. Position oven racks in the top and bottom thirds of the oven.
