A basic fruit glaze is commonly used to finish the tops of fruit tarts or any other pastries that have fresh fruit on top. This gives the fruit a glossy finish.

  • 280 grams (1 cup) apricot jelly or jam

Method

  1. Combine the jelly or jam and water in a small saucepan over medium heat. Heat and stir until the mixture becomes loose.
  2. If you used jam, strain the mixture through a fine mesh sieve to remove any lumps or seeds.
  3. Let the mixture cool slightly. Brush gently over the fruit. Alternatively, you can toss the fruit in the glaze before topping the pastry.
