Pâte à choux, the base for these puffs of air with a hint of Gruyère cheese, is an extremely versatile pastry that is both beautiful and effusively light, two qualities that are difficult to achieve in baking. In fact, choux paste is so malleable, it can be piped into any shape, including swans for a dramatic take on profiteroles, and it is delicious whether served sweet or savory. So you can imagine my pride when I mastered a gluten-free version of this culinary giant.
