I invented this combination entirely by accident when, coming home late one evening to a refrigerator bare save a can of salmon roe and some persimmons in the fruit bowl, I decided to slice up the persimmon and eat with a spoonful of roe on top. I loved it so much it has since become a favourite snack. It makes a brilliant canapé to serve with drinks, that zing of orange colour making them an irresistible beacon to which all are drawn like moths to a flame.
