Probably the finest of all savouries. The ‘angels’ are oysters, wrapped in bacon and then grilled or shallow-fried and presented on warm toast fingers. If scallops are used instead of oysters, the savoury becomes Archangels on Horseback.

There are mixed opinions about ‘angels’ and ‘devils’ (see introduction to next recipe). Some say that angels should be chicken livers instead of oysters, something I certainly do not agree with, and others that devils should be chicken livers instea
