How do you fry oysters so that they’re crisp on the outside yet still juicy? It all comes down to the temperature of the oil. Fry at too low a temperature, and your oysters will be soggy and greasy; too high and they will be burnt and dry. Invest in a deep-fry thermometer and make sure your oil is heated to 350°F/180°C.
