Melt the butter in a pan over moderate heat, stir in the sugar and cream until dissolved. Bring the mixture to the boil and simmer for 2 minutes. Remove from the heat and cool the pan by standing it in cold water for 2–3 minutes. Beat the filling until it is thick but still spreadable.
