My husband, Jim, and I share a great love for sushi, and we have a family tradition of rolling up a bunch before the presidential debates every four years. Sitting back with a plate full of fish wrapped in seaweed and dipped into spicy mayo is a great way of getting through those particularly tough election seasons. I mix a little cream cheese into cauliflower rice to create the slightly sticky effect of sushi rice. If you don’t have a sushi mat, don’t worry: you can still make a good roll
