Lamb and Sweet Potato Shepherd’s Pie

Fun fact: New Zealand, where my husband Jim’s family is from, has the highest density of sheep in the world. The country is the largest exporter of lamb. When we go to New Zealand to visit we find lamb pies everywhere, from dressy restaurants to the mini case at the gas station. Here this classic meat-and-potato dish goes spudless and leaves you feeling surprisingly light after your meal.
