This dish is Jamaica’s national dish. It will look surprisingly like scrambled eggs, but don’t be fooled, the flavour is exceptional. Ackee and saltfish is usually a speciality breakfast dish, but quite often makes it to the lunch menu or as a dinner appetizer. Serve with boiled green bananas, yam or dumplings, fried ripe plantain and avocado. More information on ackees is on page 6 and on saltfish on page 17.
