As a boy I’d climb the cashew trees in my grandfather’s garden and eat the fruit. He thought it was the birds until one day he caught me. I fell out of the tree straight into his arms for a big telling-off.

Ingredients

  • ½ tbsp sunflower or groundnut oil
  • 1 level tsp ground allspice
  • ½

Method

  • Mix the oil with the spices and toss the cashews around in the spicy oil. Put all of this into a dry frying pan (use a spatula to get every drop of seasoning out into the pan). Cook over a medium heat, stirring occasionally, for about 3 minutes, then stir them continuously for another 3 minutes so that they don’t catch and burn on the bottom of the pan.
