In a stand mixer with dough hook attachment, mix the bread flour, pasta flour, yeast, water, salt and olive oil until a smooth elastic ball is formed, about 10 minutes.
Take the dough out of the bowl and rest on a table for 10 minutes under a damp cloth. Once rested, knock the air out, then shape it into a nice tight ball. Place the dough in a bowl and cover tightly with clingfilm.
